Brasero Atlántico opened in October 2025 in a converted Georgetown firehouse at 1066 Wisconsin Avenue NW, bringing to DC the Argentine live-fire concept that Alex Resnik and world-renowned bartender Renato “Tato” Giovannoni established first in Buenos Aires before expanding to Barcelona and Bahrain. Georgetown is DC’s only strictly Argentine restaurant as of its opening, which makes the Wisconsin Avenue firehouse a significant addition to a dining city that has been underrepresented in the South American grilling tradition.

Tato Giovannoni built his international reputation through the Florería Atlántico bar in Buenos Aires, which has consistently appeared on the World’s 50 Best Bars lists and which introduced the craft cocktail world to a distinctly Argentine vision of the bar: flowers, herbs, South American spirits, and the layered preparation that his background in theater and botany informed. The Florería Atlántico that exists in the Georgetown firehouse, accessible through a hidden entrance, carries this Buenos Aires identity to the Georgetown underground.

Executive Chef Manuela Carbone, a Buenos Aires native described as a rising star in global gastronomy, leads the kitchen around a massive live-fire grill that is the physical and culinary center of the dining room. The asado tradition that Argentine cooking centers on is organized around live fire management as a primary culinary skill: reading the heat, positioning the cuts at the right distance from the coals, and timing the rest that the cooked meat requires before service. The centuries-old tradition of the pampas, where cattle herders cooked entire animals over open fires, is the reference point for a kitchen technique that Carbone executes at the level of fine dining.

The Washingtonian’s 2026 100 Very Best Restaurants list included Brasero Atlántico in its inaugural DC year, which is the recognition that validates the restaurant’s quality level in the local dining market.

Reservations are recommended. The restaurant is open Tuesday through Sunday from 5:30pm, with late closing on Friday and Saturday. The firehouse conversion at 1066 Wisconsin Avenue is a significant Georgetown building: the former Georgetown Hose House, a historic structure in the lower Wisconsin commercial block, provides a physical context that the industrial character of live-fire cooking suits naturally. The high ceilings and the masonry structure of a firehouse give the dining room the spatial quality that the massive grill requires, and the Floreria Atlantico hidden bar, accessible through a concealed door in the restaurant, brings the Buenos Aires underground bar concept to Georgetown’s historically understated drinking culture. Tato Giovannoni’s cocktail program at the hidden bar, which draws on South American spirits, herbs, and flowers in the preparation style that made Floreria Atlantico in Buenos Aires a global destination, provides a completely different experience from the restaurant above. The Washingtonian 100 Best Restaurants 2026 recognition came in the restaurant’s first full year of operation.
