The model worked well enough in New York that the company expanded through Manhattan and into other cities, absorbed a difficult pandemic period that required significant restructuring, and emerged with a narrower footprint and a clearer identity. Georgetown was part of the expansion that followed.

The menu rotates with what is available and what the kitchen decides to build around it. The bowl format is customizable, with a base of grain or greens, a protein, a selection of roasted and prepared vegetables, and a sauce. The roasted vegetables are the distinguishing element: items like crispy Brussels sprouts, roasted beets, and caramelized sweet potatoes that hold up under real heat rather than steaming in a warming tray. House-made focaccia comes as a side and has developed its own reputation among regulars. Crispy chicken sandwiches on that same focaccia are the closest thing on the menu to a traditional fast-casual anchor item.
